Author’s Warning: The Spring Festival window (CNY eve through day 6 of the lunar new year, February 6-12 in 2027 for the 2026 lunar year, but February 17-23 in 2026) sees Huizhou empty out — most restaurants and shops close for 3-5 days. Plan around this window unless you want to be in an empty city.
1. Early December: Last Autumn + First Hot Spring
The tallow trees at Nankun are still red until early December. The hot springs are now at their peak contrast — 18°C air, 58-72°C water. The bird migration is fully established.

3. December-January: The Hot Spring Season

4. Late January to Mid-February: Hakka New Year
The Hakka New Year (客家春节) is the most distinctive cultural season in Huizhou’s winter. Five traditions to know:
The New Year’s Eve Sticky Rice (年糕)
Hakka families steam a 6-inch-diameter sticky rice cake (年糕) on New Year’s Eve, symbolizing “year-high (年高)” — prosperity. The cake is sliced and pan-fried with egg for breakfast on the first 5 days of the New Year. The traditional recipe uses red bean, brown sugar, and lard — heavy, sweet, and very calorie-dense.
Where to experience: The Boluo walled villages (Yetang, Baipuzhai) all make 年糕 in the week before CNY. Visitors are usually welcomed to help steam one.
The Ancestral Hall Ceremony (祠堂祭祖)
On New Year’s morning, every Hakka village gathers at the ancestral hall (祠堂) for the formal clan ceremony. The eldest male lights incense, reads the clan genealogy, and pours rice wine for the ancestors. The ceremony is open to all village visitors — bring a small gift (a bottle of wine, a red envelope ¥100-200).
Author’s Tip: The most accessible ceremony is at Huidong Baipuzhai Village (白埔寨村) on the morning of the 1st day of the lunar new year. Arrive by 8 AM. The village chief will seat you with the clan elders; you’ll be given tea and a piece of 年糕. Photography is allowed but never of the genealogy book or the wine offering.
The Hakka New Year Song (客家新年歌)
Different from the mountain song tradition, the New Year songs are performed at every door in the village — a 3-person group (lead singer, second voice, drum) goes house to house, singing blessings and receiving red envelopes. Tourists who can sing one chorus back are universally invited to dinner.
The Hakka Five-Color Rice (五色饭)
A Hakka New Year specialty — sticky rice dyed 5 colors (red, yellow, white, black, purple) using red yeast rice, turmeric, plain rice, ebony, and purple cabbage. The colors represent the 5 directions and 5 harvests. Made only on the 1st and 15th of the lunar new year. The 2026 dates are February 17 and March 3.

The Hakka Dragon Dance (客家龙舞)
Hakka dragons are longer than Cantonese dragons (typically 30+ sections vs 9-12), with bright green-and-gold scales. The dance teams train for 2 months before CNY and perform every day from day 1 to day 6. The best places to see them: Boluo County Cultural Square and Huidong Baipuzhai Village.
